Ceylon or Indian? The difference between two kitchens on one menu

They share spices and history, yet Ceylon and Indian food taste worlds apart. A guide for anyone choosing between kottu roti and butter chicken.

Guests ask us this constantly: what is the actual difference between Ceylon and Indian dishes? Both kitchens use the same family of spices — cumin, coriander, turmeric, cinnamon — and yet you notice the difference on the first bite. At Kurundu we serve both, and that is deliberate: together they tell the story of a whole region.

Coconut versus dairy

The clearest difference is the base of the sauce. North Indian curries lean on dairy: cream, yoghurt and ghee give butter chicken and korma their velvety roundness. Ceylon cooking works almost always with coconut milk. That makes a Ceylon curry lighter and fresher, with a sweet undertone that carries the heat rather than muting it.

Roasted spices and pandan

Sri Lankan cooks roast their spices darker than their Indian counterparts. That gives Ceylon curry powder its deep, almost smoky character. Add ingredients you rarely meet in India: pandan leaf, curry leaf, smoked Maldive fish and of course cinnamon — true Ceylon cinnamon, soft and floral, not the sharp cassia.

Rice as the plate, not the side

In North India bread often takes the lead: naan, roti, paratha. In Sri Lanka everything revolves around rice. A rice table is not a side dish but the centre — a mound of rice ringed by small curries, sambals and vegetables that you combine yourself. Every bite tastes slightly different from the last.

So which do you choose?
